I was at a local fish place today and I overheard an employee who, by his claims, has been cooking shrimp since he was nine years old, telling a customer the best way to cook shrimp for shrimp cocktail.    He said to boil the water, toss in a bottle of beer, pour in the shrimp, etc.    He said that you wouldn't believe how much better it was with beer in the cooking water.
 
I asked him afterwards if this market cooked shrimp that way.   He said that he does if he has the beer.   He also told me that most of the better restaurants in Pittsburgh cook their shrimp with beer in the water, and he named one in particular that was famous for it.
 
I'm not sure how accurate this is, but I just wanted to warn everyone that this might be happening.
