Hi all,
I know that I'm likely too late for most of your sugar cookie baking,
but if I catch one late-baker, this email will be well-worth it.
For the past couple of years I had a workable GF sugar cookie recipe,
but this year I perfected it. I took my mother's sugar cookie recipe
(http://www.mauelshagen.com/recipes/SugarCookies.jpg) and replaced
the 4 C flour with:
1 & 1/3 C Tapioca Flour
1 & 1/3 C Amaranth Flour
1 & 1/3 C Potato Starch
4 tsp Xanthan Gum
...and they turned out so much like the old wheat-based variety I had
to ask my wife for a sanity check on it. None of the grit from rice
flour. None of the slight beany taste from bean flours. You'd never
know they're GF.
