Kristina,

A simple and quick Turkish recipe for leeks.

Bunch of young leeks ( thin ones),washed well after removing the top and any 
blemished leaves and quarter the leeks lengthwise
1 large onion,chopped
1 carrot,julienned
1 lemon,juiced
1/3 cup of water
Olive oil
salt to taste

In a pan,pour enough olive oil to cook your onions until soft,add carrots 
and lemon juice. Cook for another 10 minutes,then add leeks, water and salt 
to taste . Cook in a medium heat until leeks are tender. Let it cool and 
refrigerate. This dish is served as a cold side dish.
