Dear List Mates,
There are a lot of good pumpkins and squashes this time of year, and one of
the best is the mini-pumpkin. These little jewels have a nice rich flavor
and are generally not watery. The pumpkin itself can be roasted and eaten
with dinner, but here is twist: they are delicious when used to enrich
muffins. Take a look at the Gluten Free Baking page and look for the <New>
flag. Click the entry and you will be taken to the Mini- Pumpkin Muffins
page. Here is the link to Gluten Free Baking.
Please let me know if you have questions.
