My husband, who is a trained short order cook and has started experimenting
with gluten free, just cooked up the most amazing GF deep fried fish and
fries for us. It ocurred to me that people might now be more receptive to GF
restaurants. Our neighbour city has a population over 100,000, and with a
rough estimate of 1/100 people having or developing celiac, that's still a
pretty good precentage of clientelle. Has anyone else had this thought,
and/or seen any existing GF restaurants? I was thinking a greasy spoon
type that has all the comfort foods GF- deep fried fish, chicken, appetizers
(like deep fried zucchini, mushroom caps etc) salad croutons, pancakes,
waffles, cinnamon buns, sandwhiches etc- all the stuff we celiacs can crave
but don't necessarily have the time or knowledge to invest in cooking for
ourselves.
Would love to hear thoughts on this idea.
