Dear Listmates,
I found this recipe for Banana Bread on line. It converts easily to gf and tastes great. This morning I substituted 1 can of pumpkin for the banana and added 1t of pumpkin pie spice and it just came out of the oven. Looks and smells great. This is one of those recopies which takes substitution easily. Next I think I'll substitute Cranberry sauce for the bananas.
Best Banana Bread Ever
3 or 4 ripe bananas, smashed
Mix in
1/3c melted butter
Add in
1c sugar (I used half white and half brown)
1 egg, beaten
1t vanilla
Sprinkle over the batter then mix in
1t baking soda
pinch salt
Stir in last 1 1/2c flour (I used Bob's Red Mill All Purpose Blend)
Pour into loaf pan. Bake 350 degrees for approx 1 hour.
