Yeast Free Bread (about 3 1/2 inches high in my 2lb Black & Decker machine)
Good for slicing and eating or toasting.
 
1 cup milk (warmed for 1 minute in microwave)
1 cup rice flour
3/4 cup ground almonds
1/4 cup arrowroot powder (tapioca starch works as well but different taste)
2 tbsp honey
1 1/2 tsp xanthan gum
1 tsp salt
1/2 tsp baking soda
1 tbsp olive oil (or soft butter)
2 eggs (beat with fork in bowl)
 
I bake on rapid bake regular crust (2 hr cycle).
 
 
Constipation Bread (also yeast free)
I give this to my daughter whenever she is constipated (due to accidental
gluten or not).
This is the Basic Bread from Elaine Gottschall's book.  I have only made it
as banana
loaf so am sending my version but to make just plain bread drop the bananas
and one egg.
 
2 1/2 cups ground almonds
1/4 cup plain yoghurt
1/2 cup honey
1/2 tsp baking soda
1/8 tsp salt
4 eggs (beat with fork in bowl)
3 mashed ripe bananas
 
Note: Ground almond is very expensive but I use it as a replacement for the
potato starch and Soy Flour in all Bette Hagman's recipes and love the
results.  I order it by the 25 lb. box and keep it in our freezer!
