When my son was a toddler (having been diagnosed at 20 months), one of his favorite 
foods was waffles. I think he would have eaten them morning, noon and night had I let him. 
As we all know, few GF foods are  enriched or fortifide, so I was (and still am) always 
looking for ways of getting a little more nutrition into my son that he misses by not eating 
regular breads, cereals, etc. Maple syrup is a good example of a better choice. It naturally 
has both calcium (6% according to my brand) and iron (8%) in each serving. Artificial 
pancake syrup has nothing but carbs. 

We recently bought a bottle of pancake syrup to serve a bunch of boys having a sleepover 
at our house--I was too cheap to spring for the real stuff for that number of kids who 
probably wouldn't have noticed a difference anyway 1 :-)  Despite the fact that I grew up on 
pancake syrup, I found this popular brand gloppy and tasting like a petroleum by-product! 
(No flames, please...just an opinion.) If you can possibly buy the real stuff, do try it. You 
may find its taste and nutritional benefits worth the cost.
