Sorry this has been so long in coming. Busy summer...
Thanks to all who responded. Everyone said the same thing, basically -- it will be pretty easy to be GF over in Hamburg because they are familiar with it. It was suggested that I bring a restaurant card in German, though most restaurants will have English speakers available. Also, there are stores there called "reformhaus" which apparently have a good selection of GF foods.
A couple excerpts...

bread, but nestled in a bed of gf fries."

"Hamburg is probably a good choice since the German Coeliac Society held the
World Coeliac Day there this year. So they might be more aware than before.

Even if you do not have a refrigerator, if you are staying in a hotel you might
take a cool box with two pieces of dry ice with you. So you could keep one piece
ice in the box, give the other one to the reception to put it in the freezer and
change them every day to keep your food cold."
