For those of you who requested this recipe from the Fall 1995 issue
of Lifeline: Diabetic Bars (makes 20)
Diabetic Exchange: 1 bar=1/2 starch/bread, 1/2 fruit
1 fat
1/2 C raisins 1 C rice flour
1/2 C prunes 1 tsp baking soda
1/2 C dates or apples 1/4 tsp salt
1 C water 1/2 tsp cinnamon
1/2 C butter or margerine 1/4 tsp nutmeg
1/2 C egg substitute (NOT egg 1 tsp vanilla
replacer) 1/2 C pecans (optional)
Place raisins, prunes, dates or apples, and water in a saucepan.
Boil 5 minutes. Add butter or margerine, remove from stove and cool for
15 minutes. Slightly beat egg substitute in a large mixing bowl. Mix all
dry ingredients together and sift into beaten egg substitute; add vanilla
and cooled fruit mixture and mix well. Put mixture in a 7 X 11 inch baking
pan. Bake at 350 degrees for 25-30 minutes. Cool and cut into 20 bars.
