After a nasty fall recently, I was consigned to a rehab facility during
which time I had several to many conversations with various Dietary people.
Three meals a day and six weeks later, I was discharged to home with no
miserable gastro experiences. Now if that isn't a miracle, I don't know
what is. BTW, I was their first EVER celiac patient.
But my favorite and most amusing story is this: every tray to me came with
a card with my name and a description of my diet, listing what I could have
and have not. The words at the top of the card stated loudly:
NOTHING WITH FLOUR. Can have gluten free waffles, breads, cookies, cereals,
bagles, & donuts.
