I received one response to the summary on amaranth. I have since  alled Bob's 
Red Mill (800-349-2173).

A woman said that on the 6th time she ate amaranth her throat swelled up.  She 
interpreted this as an allergic response and said that few would have it.

Bob's said that they now treat and regard amaranth as gluten-free contrary to 
their latest catalog. This means they also test it for gluten.
