I don't know about Puffins, but perhaps someone might like my recipe for Cuffins. They are a cross between a cup cake and a muffin. They are good either plain or iced with cream cheese frosting.

ALMOND CUFFINS
1 c sugar
2 ½ c ground raw almonds (with skins)
½ tsp cinnamon
½ tsp lemon or orange extract
8 eggs (separated)
Beat egg whites to stiff peaks. Combine yolks, sugar, cinnamon and extract. Beat thoroughly. Mix in ground almonds then fold into egg whites.
Makes a two layer cake or 24 muffins.
