Triticum monococcum, the oldest and most primitive cultivated wheat,
appears to lack gliadin toxicity in celiacs and may be a safe wheat
alternative according to this new study:

Scand J Gastroenterol. 2006 Nov;41(11):1305-11.
Lack of intestinal mucosal toxicity of Triticum monococcum in celiac
disease patients.
