I have tried some of the gluten free spaghetti made with brown rice and rice
bran and others made with corn and have not been very impressed. I think it
is the texture that I don't like. I have not been able to find noodles
except in Stroganoff Package mixes and I do a lot of my own cooking.

Recently, I discovered that rice sticks and oriental noodles normally made
of rice and water are a great substitute for the real thing. The texture is
much more like the wheat based versions and the flavor is fairly bland and
will really work with most any sauce. Some grocery stores carry a limited
selection, but your best bet is an oriental market. Even though the store
looks small, they will probably carry a good selection of noodles and rice
sticks. At our Oriental market, they even have something called vermicelli
rice sticks, if you like a thinner spaghetti. Beware though, they also
carry wheat based rice sticks, so read the ingredients and make sure they
are gluten free.
