Brother Juniper’s Blueberry Muffins

1 bag Gluten-Free Pantry Favorite Muffin & Scone Mix (#126005M

1 1/3 cup low-fat buttermilk
1 large egg
1/3 cup vegetable oil
1 ½ tsp. G-f vanilla
1 cup fresh or frozen blueberries
Preheat oven to 350 degrees. Combine all ingredients except berries. Mix
until smooth. Fold in berries. Scoop into 16 prepared muffin tins that have
been lined with muffin papers or coated with vegetable spray. Bake 20 min.
Best to under bake. Cool 10 min. in pan before removing. Cool completely and
enjoy!
Note: For extra large muffins, pour batter into 12 prepared muffin tins.
Fill to top. Bake 25-30 min.
