Dear Listmates,

If you do even a moderate amount of baking, you might want to check into
buying the size package and type of yeast that commercial bakers use. It is
rather inexpensive stuff. SAF costs $2.35/pound and Fermipan is $3.15. That
is less than what Safeway charges for Fleischmann's (around $8.00 for 4
ounces). Fermipan contains "starch." I would have included the
manufacturer's exact words, but they sent me a PDF copy of a fax which
cannot feasibly be copied directly into email. The letter said that the
vegetable source of the starch is Potato. SAF contains no starch, and ditto
for Red Star which is "active dry yeast" instead of "instant yeast" al a
Fermipan and SAF. Red Star is sold in two pound bags and costs less than
$4.00.

I bought my yeast at Smart & Final, a warehouse food and goods store that
has supplies and food items in fairly large sizes.
