Here is a brief summary to my question regarding how the host is 
distributed at mass and how to let the priest know each week that you 
are there and will need the low-gluten host.  I have compiled all 
responses in their entirety in a Word document if you would like more

    * Keep hosts in freezer.  They become stale quickly.
    * Some keep the hosts at home in their freezer.  They put a host in
      a pyx and when they arrive at mass, they place the pyx on the
      plate with the rest of the hosts that will be brought up during
      offertory.  All hosts are consecrated together, but the low gluten
      hosts are kept in the pyx.  They sit so that they can go to priest
      or eucharistic minister who has the pyx on a plate with the other
      hosts.  When they approach for communion, the pyx is opened and
      given to them.
    * The pyx is placed on the altar before mass starts.  The  priest
      has the pyx with him during communion, and when  the when the
      person to receive it comes up, the pyx is handed to them and they
      open it and give it to themselves.  This way Father never touches it.
    * Wrap it in Saran Wrap and put it on top of a dish of Hosts when
      she arrives at Mass.  When she goes up to receive, Father hands it
      to her wrapped. 
    * When another arrives at the church, she removes a host from the
      church's freezer and puts it in a clean chalice which is placed on
      the altar.
    * Sit in the front row and make eye contact with the priest.  When
      he removes hosts from the tabernacle, he takes out the low-gluten
      hosts at that time.
    * Go up to the altar after the Lamb of God and receive it before
      anyone else goes up.
    * Walk up with the eucharistic ministers to the altar and receive
      when they do - before anyone else.
    * If the host is in a pyx, the priest holds it in the palm of his
      hand while giving out communion.  When the person it's for comes
      up to receive, he hands the pyx to that person.  They keep it and
      have it back for next time.
