WAP has tips for getting down organ meats you cannot chow so
easily. WAP is Weston A Price Foundation. WAP has tips to
encourage people to eat more organ meats and ideas on how to
increase consumption of raw nutrient. Sally Fallon has tips
galore in her book, Nourishing Traditions. While they are not
paleo, most any food groups will have good tips that apply to
others.
Some ideas from WAP and Fallon:
Beef heart (and other organ meats) can be cut into chunks (or
ground) and used in a cooked meat loaf or for tomato sauces, etc.
Egg scrambles, quiche, stuffed cabbage, etc...
For RAW: Some people also work fresh raw meat/organs into such
things as fruit smoothies (I normally add raw egg)--or raw fresh
organ meat to steak tartare. If you (are able to) juice it, you
can add raw bits to tomato/veggie juice & pulverize--chiliheads
enjoy a bit of whatever they use for Tabasco.
