My husband ate at the Loughborough Inn GF (and he is sensitive to gluten)
without any issues for 3 days and 3 nights! We sent the request for Gluten
Free ahead of time, and gave them information about Gluten Free
requirements. They had served Celiacs before my husband so they seem to
have it right on their own!

We do not have any restaurants that have a specific gluten free menu. I
can recommend a couple of options though.
Aquaterra Restaurant at the Radisson Hotel is a very nice spot which is
able to provide gluten free easily as they make just about everything
themselves. They have a dessert "trio" that is gluten free - flourless
chocolate cake, creme brule and a homemade prauline ice cream with a
chocolate stick - amazing!!
Lone Star is a Texas-style restaurant right downtown that serves chips and
salsa on your table (both are fine) then has tacos, or enchilada that are
gluten free (need to mention this to the waitor or waitress). They will
also serve their fajitas with corn tortillas - I've had all of these
without a problem.
Chez Piggy is a very popular restaurant downtown - they don't have an
extensive choice for gluten free, but do have staff that require gluten
free so they understand - I usually have their ceasar salad with grilled
chicken without the croutons.
In Canada we also have a chain of Chicken BBQ restaurants called Swiss
Chalet. They have a pamphlet that details the content/allergens in their
foods. The BBQ is safe, as well as the dipping sauce, (not the fries)
also the baked potato, chalet salad with chalet dressing (like french
dressing) and the cole slaw are also safe.
