Quick Meals for guests;
1) Shrimp Greek style-- I use minute rice--
Then take a fry pan & put about a teaspoon of crushed garlic into a
little olive oil. ( I use garlic all precrushed from a jar) Sautee- Add 3/4
of a jar of Tomatoe /Basil sauce ( I use classico Dinapoli - but your
choice) Cook till starts to bubl4e-lower heat 1 button-then throw in cooked,
peeled shrimp till hot-- add crumbled feata cheese ( can buy all crumbled)
for about 2 minutes & serve over the rice with a side salad. ( I use Bag
Salad from Dole in Every grocery noiw )
2) Chicken Salsa-- put chicken breasts in broiler for 30 minutes at 350
degrees. then remove rack & sit down in pan--add a jar of Salsa over it &
bake for 25 minutes more--put grated montery Jack ( I buy that way) cheese
on top-till it melts--( a few minutes ) & serve
3)Chicken, Potatoes - Take a pan--put in a few teaspoobns of olive oil--
chicken breasts-- peel & cut up potatoes- an onion & a large can of whole
peeled tomatoes--about 1/2 cup water or tomatoe juice-- It can be prepared
in AM to cook when you get home-- Bake at 350-375 for about 1 hour 20
minutes-or untill potatoes are done-- about twice while cooking I scoop up
juice in bottom of pan & pour it over it.
There are so many fast things to cook now--if you are near costco they have
stuffed salmon filets-- broil for 12 minutes while you put a bag salad in
bowl--add croutons--- a puuch of carrots- and you are set. I like fast
things as my kids never wait--and my husband is no better..... I do boboli
pizza with all sorts of things on top--very easy. Stir fry in a wok--you can
raid a salad bar for most things pre-cut-- add chicken strips or
shrimp--very easy-- if you want hints on sauces to use LMK--
