Koji is the "active culture" used to ferment the other ingredients
into tamari. I forget whether A. oryzae is a bacteria or a yeast,
but it's carried from batch to batch like "mother of vinegar". If
the tamari doesn't list wheat or barley, I'd be very surprised if
the koji wasn't GF.
