With the proliferation of medical information on the Internet, there has
been a concurrent increase in the amount of bad, outdated and unsupported
information. I find this to be true day-in and day-out when it comes to
celiac disease. Sites still claim that distilled vinegar is not acceptable
and spelt is. Sites promote unproven tests for celiac disease and sell
unproven products that purport to allow celiacs to eat gluten.
The best defense against such bad or misleading information is to inform
yourself.
