This is good & easy. (It's got to be easy if I made it!)
8 oz panne pasta (I used about half a bag of Trader Joe's brand)
1 cup chopped broccoli (small bunch)
one green onion, chopped
olive oil vinaigrette (Italian salad dressing; I make my own, but don't have
a recipe to share.)
2 to 3 oz. soft goat cheese (chevre), broken into pieces
Bring a large pot of salted water to a rolling boil. Stir in pasta. Add
some olive oil to cooking water. Cook 6 minutes, stirring often, then add
chopped broccoli for last 4 minutes of cooking time. Strain & stir in
onion, goat cheese & a little olive oil vinaigrette to taste. The goat
cheese melts & gives a creamy coating to all the other ingredients. Mmmmmm.
