"Potato flour" is much heavier than "potato starch". Most GF recipes
call for potato starch; in fact, I don't think we've had any potato
flour in our kitchen for at least a year. Potato starch and potato
flour can NOT be used interchangeably in recipes.
On the other hand, you will often see references to "tapioca starch"
and "tapioca flour" in stores and recipes. I believe these terms
both refer to the same product. In other words you CAN use tapioca
starch and tapioca flour interchangeably.
