75% lean? That would make it 25% fat? The ground beef on that site is
85% lean or more.

When I cook grocery-store ground beef, there is always a lot of fat that
cooks out. With grass-fed, there's just a little bit. (And with bison,
there's hardly any at all.)
What is an appropriate ratio? Wouldn't that vary with your calorie
requirements?
