There are lots of claims about the goodness of coconut and it's various products, but I didn't come across any peer-reviewed research. My asking the List is not an exhaustive search though! LOL. Many people swear by it, some use it in moderation, and some avoid it like the plague.
A quote from Dr. Walter Willett of the Harvard School of Public Health, sums it up best : "When a hard fat is needed, coconut oil is an acceptable alternative, at least until better ones come along." I will e-mail Dr. Willett's article to anyone who wishes it.
I plan to continue to use it in moderation, and since I have my lipid panel checked 3-4 times a year, I can and do keep an eye on any changes. So far, so good.
Warmly,
Cheryl in PA
