The following response is from the winemaker at Stellar Organics.   
They make nice wine, sulfite free too. I queried them after the  
subject of flour paste being used to fill in cracked barrels came up  
on the listserv. (I also asked about eggs used in the fining process)

"There is no danger of Gluten having been added to any of our wines.  
There is
one product available as a gelatin substitute based on Glutens. This was
developed to cater for the vegans and vegetarians who do not want animal
products in their wines. We have not used this gluten based product  
and are
unlikely to in the future. Our barrels are still young and we would  
rather
use old ones as planters than have to patch them up with glue of any  
kind....
Gluten intolerance is a very real phenomenon and will affect someone  
physically. We
would rather give people the choice based on knowledge and use a product
that will do no physical harm if ingested unknowingly.
None of our products at the moment have had any egg fining used on them.
That is not to say that we will never use eggs in the future. Fining  
trials
determine the best material to use as allowed under the rules of organic
production. I can give you an assurance on all our wines re Gluten  
but you
will need to check with your supplier about the use of eggs on any  
red wines
produced after the date of this message." 2/15/07
