I stopped at a new Indian grocery store today and saw so many types of
flour! I have no idea what most are. I did buy some rice flour and
besan(chickpea) which I have tried before. I also got some Bajri flour -
the ingredients say bajri beans but the store owners insisted it is made
from millet. I checked on the internet and bajri does seem to be millet. I
am still confused by the word bean - I think millet is a grain. Anybody
have any insight on this?
Has anyone tried this? The owners said it makes good tortillas - they just
sub it in for regular flour in a favorite tortilla recipe. I thought that
sounded promising. There were quite a few other flours that appeared to be
from beans or lentils - all much cheaper than health food store prices.
Does anyone out there have experience with any of these flours?
I still have not been able to find brown rice flour at any of the asian or
Indian stores. I find lots of white rice and sweet rice. Yesterday I found
a sale on tapioca starch and got many bags at 40 cents a pound. I was
pretty excited. Has anyone else found brown rice flour at an ethnic grocer?
