Here's another response about how foods are tested.

The link below is to the minutes of the August 2005 meeting the FDA had on Gluten Free Labeling. If you read down through it you will find a lot of information on testing for gluten and also lots of info on how (at least in August, 2005) companies that sell GF foods handle the potential of cross contamination. There is also good reading on the handling of grains at the grain mills and the potential for cross contamination at that level.

Keep in mind that in the 1 1/2 years since the meeting, companies may have changed their practices.
