Dear Listmates,
Vic usually sends messages, but this is Hallie, his ever-loving of many
years.
I found a recipe in the San Jose Mercury Food Section on Wednesday and got
inspired. I adapted it for Vic's gluten-free diet. The result was a luscious
cake that was light and airy, at least on the day I baked it. We'll see what
it is like tomorrow.
This is a snacking cake. You don't frost it. It is more informal. Have it
with your morning coffee or for dessert anytime. Here is the recipe:

I used blueberries instead of strawberries (original recipe) because I
really don't like cooked strawberries. Next time I will use apple chunks,
but the spice will be different. Both the original and modified version is
in the recipe in case you want to make something close to the original. I've
also highlighted changes.
