This is a fast, easy and thoroughly deliceous recipe for creamed spinach

1 small pkg frozen spinach, thawed, drained and chopped

Chop an onion very fine and sautee in skillet with a small amt of olive oil.  

Add spinach and stir until thorough heated. Add salt, pepper and a pinch of nutmeg.  When spinach is thoroughly heated thru, add 2 tablesppons sour cream and stir to incorporate.

Serve hot

hint...use leftovers in a quiche
Grease a baking dish...add spinahc, 4 eggs, lightly beaten, 1 cup whole milk or cream, 1 cup shredded cheese of choice, spinach, salt pepper and pinch numeg...Bake at 350 for about 45 min or until tests done.  Let sit a few minutes before cutting
