"9/17/2007 - Carbohydrate company Penford Food Ingredients has
launched a new gluten-free starch product for use in bakery
applications targeting the growing free-from market. PenPlus 2510,
launched last month, is a pre-gelatinized tapioca starch, otherwise
known as an 'instant' starch since it becomes viscous when room-
temperature water is added to it, without the need for external heat
as with some other starches."
