Thank you to everyone who gave me suggestions.  Several people asked for 
this list who will soon be traveling to HH.  I look forward to a good meal.

Best and safest bet in HH is, believe it or not, Outback on the main drag;it
has an extended menu with more seafood than usual.  this is a difficult
place to get GF meals in a restaurant.  The big grocery stores there, Publix
and maybe Safeway (can't quite recall which chains but they will be very
obvious from the road) all have fresh seafood and lots of choices of
vegetables, fish, shrimp, fruits and so forth.  Not a big selection of Gf
cereals or waffles in the grocery stores, so if possible, bring your own
bread, cereal etc.  Not aware of the hfs selection, but they no doubt have
one or two.......we go there often, but end up either at Outback (the
take-out there is a possibility too, but be sure you double-check everything
before you leave, often they make mistakes) or buying fish and veggies and
cooking at home.  Many disasters at restaurants, a lot of fried everything
and sauces, rushed staff, not used to Gf, mainly catering to tourists and
slapping plates of fried stuff together.  Pls. post your summary, we're
going again in May and would like some new ideas; since we live in Altanta,
we drive and pack the car with our GF supplies, that's why I am not familiar
with the hfs scene there.......thanks and good luck!

There's a Bonefish on Hilton Head.  They have a gluten free menu (which you 
may very well already be aware of)

If you come through Charleston there are 3 such stores and our site lists
all the restaurants that we have found good stuff at and we add one each
month
by eating at one our leader has talked to prior to eating.  Then we get a
small g/f menu.

We vacation on Hilton Head every summer.  We have eaten successfully at The 
Quartermaster, Old Oyster Factory,  and our new favorite is Alexander's in 
the Palmetto Dunes Resort. The manager there, I believe his name is 
Tom, came to the table with the chef to review what my son was interested in 
for dinner.  Both "Tom" and the chef returned to the table to make sure 
there weren't any problems.  My son has never been disappointed.  Have a 
great trip.
