This morning's email from SparkPeople featured a recipe for Fruit-Filled
Chocolate Meringues. Besides being low-cal, it is gluten free. Looks simple
to make and would make a great dessert to impress, and a treat for celiacs.
Although their recipe calls for fresh or frozen raspberries, any summer
fruit will work as long as they are filled at the last minute so the
meringues don't become soggy.
