I have a really nice brownie recipe for when the weather is hot. Make just
the base and serve with icecream, cover with just chocolate icing or follow
the recipe exactly and you will have Chocolate Mint Brownies. If you don't
like peppermint just leave it out. The reason its great for warm weather is
that it is a microwave recipe and they are done in 5 minutes! If you have a
1,000 watt microwave cook on 85% power. Its it written for a 700 watt oven
but I have switched to a 1,000 watt and did it at 85% power.
Chocolate Mint Brownies (Microwave Recipe)
Ingredients for Gluten Free Brownies:
2 eggs
1cup sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 cup melted butter (you may use cooking oil such as canola)
3/4 cup rice flour
1/2 cup cocoa powder
1/2 cup chopped walnuts
1/8 teaspoon peppermint extract
Icing:
2 Tbsp. butter; 1 cup icing sugar; 1Tbsp. cream; 1/8 tsp. peppermint extract
Chocolate: 1/4 cup chocolate chips, 1 tbsp. butter.
Method:
Make sure all your ingredients are gluten free. Beat together eggs, sugar,
vanilla and salt with mixer for 1 minute.
By hand stir in rice flour, cocoa powder and nuts. Spread in greased 10"
glass baking pan. For 700 watt microwave - bake on high for 5-6 minutes.
For 1000 watt microwave bake for 6 minutes at 90% power.
Test with toothpick, should come out clean.
Mix icing ingredients together. Spread on cooled brownie. Chill.
Chill. Microwave chocolate chips
and butter until butter is melted, stir. Drizzle over icing. Chill before
slicing.
