I have home-rendered pork fat (lard) and grass-fed bison fat (I guess you  
could call it tallow), both of which are delicious in different ways.   
What's more, the process of rendering each of these results in a nice  
batch of cracklings, also delicious.  When I feel like a little snack  
between meals, a spoonful of one of these fats tides me over.

OTOH, I think if you start off with poor-quality feedlot beef, the fat  
that results will taste pretty awful even if you render it carefully.   
Liver and fat become the garbage dump of all the noxious stuff these poor  
beasts are given.
