A very considerate friend invited us over for dessert tonight. She was  
serving ice cream pie and didn't want my daughter with Celiac to feel left out. 
 
She made the GF Peanut Butter Cookie recipe into a pie crust and baked it  
and then added the ice cream. My daughter was so happy said it was  great!!!!
 
Hope this is helpful to anyone looking for a good pie crust.
