Thank you for all of your responses and help. Following is the information:
It might be easier for you to send some things to match the menu...like
pizza. Find out how items should be package (foil or microwavable) so they
can be reheated w/out repackaging to reduce the risk of cross contamination.
Pack the g.f items in 2 boxes...1 to go in the refrig or freezer and another
to keep shelf stable items...crackers, cookies, cereal. Cereal can be
packaged in serving sizes in zip lock bags for convenience.
One easy frozen dinner is the sliced beef w/ mashed potatoes & peas by
Banquet...Cost ~$1.00.

One mother prepared 84 packaged meals to send along with her son to a 6 week
camp. She also made muffins, french toast, and bagels.

look at the menu, identify problems and give suggestions....I've been at a
number of conferences at camps and it usually works best, along with
bringing some extra items.
