Just had to share this recipe. I made this salmon today and it was
incredibly good.

coat a large salmon fillet with a gf dijon mustard.

place it on a parchment paper lined cookie tray.

Now cut a zucchini, a summer squash and 2 Roma tomatoes into very
thin slices.

put alternating rows of the vegetables on the top side of the fish
making sure you cover all the fish.

Now cut up 2 Tablespoons of fresh dill and mix it with 3 tablespoons
of olive oil.  spread this over the vegetables.

bake for 30 min (or until cooked) at 375 deg F.

Serve hot or at room temperature.

I mixed up a mustard/dill and mayo dressing and a mayo/horseradish
dressing and served it at room temperature.

This was the tastiest salmon I have ever tasted.
