I personally use cold pressed flaxseed oil., but you can use anything you
would use to grease a tin or something, like coconut/olive etc Try to
use a mild tasting grease though - bacon fat probably wouldn't go with
it. If you use canola oil (although I was under the impression it wasn't
paleo due to the way it was processed) then I guess you could use that.

Boy! The mere mention of canola oil sure stirred up a lot of comments! :)
I don't even use it that much myself--was just guessing what you might
have used.

Warning: I don't know of any Paleo or low carb diet guru who doesn't
prohibit using flaxseed oil in cooking because it reportedly is very
unstable and is easily oxidized when heated, releasing toxic free radicals
and damaging the fatty acids (Cordain is not convinced this is necessarily
the case, but he errs on the side of caution and therefore also prohibits
the use of flaxseed oil in cooking). Even though flaxseed oil is
considered Paleo, it's not Paleo when it's used in cooking. Confused
yet? :)

If the intracies of using flaxseed oil didn't confuse you, the canola oil
debate surely will! :) Canola oil is one of several things that there is
disagreement over in Paleo and low carb circles. There have been numerous
debates and discussions over it in this forum. I recommend you check out
the references I listed in an earlier post for information on this. Loren
Cordain is the most well known of Paleo diet advocates who recommends
canola oil. Have you read Cordain's The Paleo Diet yet? It's a good book
to read for a different Paleo perspective than the also-good NeanderThin
by Ray Audette. My mind is still open on whether canola oil is healthy or
not, and I can see good arguments both pro and con on whether it could be
considered part of a modern approximation of a Paleo diet. It is of course
impossible to duplicate an actual Paleolithic diet, so all any of us can
do is approximate.
