Celiacs who have serious cases of Celiac Disease may want to avoid
products of the Bakehouse  because of the testimony of Lee Tobin, team
leader of the Bakehouse given to the FDA on 8/19/05.

His statement on testing was as follows:

"We use the BioKits rapid gluten test friom Tepnel Biosystems which
costs about $16 per test.

This is a qualitative test that detects the prescence of gliaden as low
as 50 parts per million

and yields results in about five minutes.  We chose this test  because
it is fairly simple to use"

This level of gliaden permitted compares to the Canadian level of 10
parts per million.
