I found out about 2 months ago that I have celiac disease and I've been strictly GF since. That's been going pretty well overall - I feel so much better! I travel extensively for work but my travel has been domestic for the last 2 months - not a big deal. I can find restaurants in the US pretty well.
However, I leave for 3 weeks of international travel really soon. I'm going to Bangalore, India; Taipei, Taiwan; Tokyo, Japan; and Shanghai, China. I've always been a relatively advertureous eater, so I never worried too much about what I was eating in foreign countries before, but of course, now I have to worry about it. Since I'm going to be gone for so long I really need to make sure that I don't gluten myself too much. I also won't be able to take TOO much food with me - I can take some, but 3 weeks is a lot of food. Asia isn't too GF friendly - not too many people have celiac disease and practically everything has soy sauce in it.
Any suggestions for how to handle this? I typically do this kind of long term travel about 3 times a year, so I need to make sure that I figure out a good system. I'm taking some GF soy sauce packets and LOTS of Lara Bars in various flavors. I also have the Triumph dining cards for nearly all of the countries. Any other helpful hints?
