In time for the holidays, here is my fav cookie.  I'm proud of this..it's been published

PEANUT BUTTTER COOKIE

1 cup non oily peanut butter or any other nut butter..almond, cashew, macademia etc

1 cup sugar

1 egg, lightly beate

1 teas vanilla

Prepare 2 cookie sheets or jelly roll pans by lining with parchment paper or a slipat liner

preheat oven to 350

Combine all ingredients [yes, there is NO flour].  Using a small ice cream scoop place on cookie sheets.  Bake 12 min or until edges BEGIN to turn light brown.  Do not let brown or they will be burnt.  Keep on sheet for 2 min to set up.  Remove to rack to cool completely.  Store in tin.  Makes 3 dozen

Note..when storing put sheets of parchment paper between layers.   

Best to make this on a DRY day
