After reading about the precautions taken to provide gf oats available
from www.glutenfreeoats.com and taking the suggestion by Dr. Green that gf
oats can be a benefit to those on a gluten-free diet, we decided to try
the product. The oats arrived several days ago and looked great. Today
we made wonderful oatmeal cookies which are some of the best I've had
ever! I wanted to share the recipe for those who have made the decision
to try oats. The only sad part is that the oats came with a note with a
suggestion that Dr. Murray's recommended start-up use for people with
celiac is a maximum of two cookies in the first week.
Here is the recipe:3/4 cup sugar (half brown sugar and half white sugar),
1/2 cup butter (softened), 1 egg, 3/4 cup Mona's Mix, 1/2 teaspoon baking
powder (Rumford), 1/2 teaspoon salt, 1 teaspoon vanilla (McCormick), 1 cup
gluten-free oats (www.glutenfreeoats.com), 1 cup chocolate chips (Nestle
Toll House).
Preheat oven to 375 degrees. Combine butter and sugar in mixing bowl of
heavy-duty mixer. Add the egg and vanilla and beat until light and
fluffy. Add Mona's mix, baking powder, and salt and beat until completely
mixed. Stir in the oatmeal and chocolate chips. Using a cookie scoop,
drop cookies onto parchment paper lined cookie sheets, placing them about
two inches apart. Bake for 9-12 minutes. Cool cookies on rack for one
minute, then remove to a cooling rack to cool completely. Enjoy!
