Hello all,
It's been a while since I posted but wanted to share a thank you -- many people (moms and dads) on this list helped me out with my research for my parenting book by taking a survey on "mommy guilt." I have a 10-year-old daughter with celiac (diagnosed at age 4) and I especially wanted to gather some data on how other "celiac parents" feel on the guilt-o-meter scale (I used to suffer pretty badly.) Just wanted to say thank you for all the "guilt" stories folks on the list sent to me and nearly all of them made it into the book which is now available. Those stories were really touching!
Another quest for help: Can anyone tell me if Oat Matzos are available here in the U.S. -- a friend of mine gets them, but imports them from England.
Also, if anyone needs a great GF Hamentashen recipe for Purim, my daughter and I have been making these for two years now -- and they are so good, even my non-GF daughter and the kids at Sunday school love them.
btw -- For Passover, I have a GREAT Matzo ball recipe that took me two years to develop but that HONESTLY taste like the real thing. I post it on the list from time to time -- let me know if you want it again.
4 Eggs
1 Cup butter-flavored Crisco
1/4 tsp. Salt
4 1/2 Cups GF flour mix (Betty Hagman's white rice/tapioca/potato flour)
1 tsp. GF Vanilla
1 1/2 Cups Sugar
2 tsp. Xanthan Gum
4 tsp. Baking powder
Cut into circles, fill with something sweet, and pinch into triangles.
We like to fill them with chocolate chips, but any GF jam will work, too. Bake on a lightly greased sheet at 350 for 10-15 minutes until barely starting to turn brown. Cool before moving or they will be crumbly.
