Carol will demonstrate the ³versatility of rice²Š
as a simple and tasty solution to ³normal² foods for healthy diets ‹ gluten
free, specialty (i.e. diabetes, autism, MS, etc.), vegetarian or just
because you care about what you eat.

Diagnosed with Celiac in 1984, Carol Jean Roberts, with a background in
teaching, consulting and science, decided she wasn¹t going to eat bricks and
cardboard the rest of her life. Carol couldn¹t eat soy or corn, so she spent
the next 6 ­ 7 years developing a premium flour from specific whole grain
rice. Carol has presented cooking demos at major Celiac Conferences and for
Celiac Support Groups in the US and Canada. She started a bakery in
Hagerstown MD, calling it Grandma Whimsy¹s Cupboard ‹ based on her
alter-ego, a storytelling clown. Carol has moved to Clifton,TN, near
Savannah to open a dedicated gluten-free factory. Her products are made from
her own fresh stone-ground, whole-grain rice that doesn¹t need extra
additives like xanthan gum, starches, preservatives, or other flours. This
lets the nutty flavor of brown rice shine through, and gives it a moist and
tender texture ‹ not crumbly, dry or gritty. The pure flour can be used cup
for cup as a simple replacement for regular wheat flour when converting most
recipes. Grandma Whimsy¹s Cupboard gives you a simple, tasty and healthy
solution to the dilemma of what to eat when you can not eat wheat.
