Snickerdoodles
Mary Ellen Bramwell (GF Utah group)
1/2 cup butter, at room temperature
3/4 cup sugar
1 large egg
1/2 tsp vanilla
1/4 tsp salt
1 1/2 cup rice flour blend
1 tsp cream of tartar
1/2 tsp baking soda
1/2 tsp xanthan gum
Mixture for rolling cookies:
2 Tbsp sugar
2 tsp ground cinnamon
1. Cream butter and sugar. Add eggs and vanilla. Beat until
fluffy.
2. In a separate bowl, mix together dry ingredients. Gradually
work dry ingredients into creamed mixture.
3. Roll dough into 1" balls. Roll balls in cinnamon and sugar
mixture.
4. Place on a greased cookie sheet 2 to 3" apart. Bake 350 for 10
minutes.
