I'm looking at some of these cake mixes that were sent out recently (thanks
to those of you that sent them out) and seeing corn meal, corn flour and the
like.

Anyone else experience sensitivity to corn?  Been a while since I tried it,
but last several times I did I had problems.  Can't remember the symptoms,
but at the time I was keeping a detailed food and elimination (sorry) journal
so I can look for it if needed.

I even have had consistent and repeatable (meaning that I add just the one
new food and do that several times with recovery in between) problems with
fresh corn.  It seems that the fresh corn would rule out sensitivity to corn
products due to cross contamination in factories that process other grains.

Would like to know if anyone else is avoiding corn and if so wondering why
all of these GF companies use it so heavily.

I will summarize and publish responses - both for and against :) corn.  If
you do respond, please keep the subject line intact so that I can easily
identify.
