I agree on all counts.  The only potential "bad" thing about coconut to my 
determination is that it contains a fairly high amount of sugars (Meat: 5g 
per cup.  Milk: 8g per cup.  Water: 6g per cup).  So if you're concerned 
about glycemic load or sugar spikes, I recommend consuming coconut at the 
end of a meal which is otherwise low in sugar.  Other than that, the stuff 
is delicious, and absolutely great for you.

Coconut Oil is special because it is one of the only commonly-available 
oils made up of predominantly MEDIUM-chain saturated fats (neither long nor 
short).  These medium-chain triglycerides (MCT) are easily digested, 
absorbed, and put to use nourishing the body. Unlike other fats, they put 
little strain on the digestive system and provide a quick source of energy 
necessary to promote healing.  Food scientists have long noted the 
nutritional benefits of medium-chain triglycerides. MCT from coconut oil 
are used in hospital formulas to feed the very young, the critically ill, 
and those who have digestive problems.

Coconut water with lime and some stevia is a great drink for hot days.  And 
for a really tasty dessert (one of my favorites), you can make an excellent 
"milkshake" by using coconut milk and stevia, with ice, in a blender.  You 
need to blend the coconut shavings into a paste first, add some water and 
blend again, til you get the consistency you like.  For less pulp, push the 
blended mixture through a seive.  Blend in the ice and stevia just before 
serving.  For extra protein and a little more "body," try dropping an egg 
in it!
